As time passed, pancakes evolved and became a popular dish in many countries, each with its own unique twist. During National Pancake Week, people come together to share their favorite recipes, try out new variations, and compete in pancake-eating contests. Many restaurants offer special deals and promotions on their pancake dishes, making it the perfect time to try out different flavors and toppings.

Ingredients:
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
Directions:
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and then add in the milk, melted butter, and vanilla extract. Mix well.
- Slowly pour the wet mixture into the dry ingredients and mix until just combined. Be careful not to overmix the batter as this can result in dense pancakes.
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter or cooking spray.
- Using a ¼ cup measuring cup, pour the pancake batter onto the pan, leaving enough space between each pancake.
- Cook for 2-3 minutes or until bubbles start to form on the surface of the pancake.
- Flip the pancake and cook for an additional 1-2 minutes until golden brown.
- Repeat with the remaining batter, adding more butter or cooking spray to the pan as needed.
- Serve the pancakes hot with your favorite toppings such as maple syrup, fresh berries, or whipped cream.
Tips:
- For even fluffier pancakes, separate the egg yolk from the white and beat the egg white until stiff peaks form. Then fold it into the batter before cooking.
- Make sure to use fresh baking powder as old baking powder can result in flat pancakes.
- Do not press down on the pancakes while cooking as this will result in dense and flat pancakes.
- For a fun twist, you can add chocolate chips, blueberries, or mashed bananas to the batter.
- Leftover pancakes can be stored in the fridge for up to 3 days or frozen for longer storage. To reheat, simply pop them in the toaster or microwave.
