Memorial Day - In Memory of our Father

***UPDATED 4/29/23***

In memory of our father GySgt Walter Irving Arnold 1931-1973

Memorial Day Monday, May 29, 2023

Memorial Day is an American holiday. Observed on the last Monday of May. We honor the men and women who died while serving in the U.S. military.

Originally known as Decoration Day, it became an official federal holiday in 1971. Many visit cemeteries or memorials, hold family gatherings, and participate in parades around this great land.

You can find the history here on History.com

Veterans Day and Memorial Day both honor those who've served. Here's how they differ, NPR.org

 Memorial Day by Annette Wynne

Is it enough to think today
Of all our brave, then put away
The thought until a year has sped?
Is this full honor for our dead?
Is it enough to sing a song
And deck a grave, and all year long
Forget the brave who died that we
Might keep our great land proud and free?
Full service needs a greater toll
That we who live give heart and soul
To keep the land they died to save,
And be ourselves, in turn, the brave!

Taste of Home Bakeable's May Challenge: Classic Lemon Meringue Pie

Taste of Home Bakeable's May Challenge: Classic Lemon Meringue Pie

Taste of Home offers a monthly Bakeable’s Challenge. I missed the first 4 months so I'm starting with May and it happens to be Lemon Meringue Pie. Better late than never is my motto.

I've always been impressed with TOH recipes, as you could probably tell by the Recipe of the Week, I make a lot of their recipes. Why not, they are delicious and made by home cooks.

Classic Lemon Meringue Pie

Total Time Prep: 30 min. + standing Bake: 25 min. + chilling     YIELD: 8 servings.

INGREDIENTS:
1-1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening
1 to 3 tablespoons cold water
FILLING:
1-1/4 cups sugar
1/4 cup cornstarch
3 tablespoons all-purpose flour
1/4 teaspoon salt
1-1/2 cups water3 large egg yolks, lightly beaten
2 tablespoons butter
1-1/2 teaspoons grated lemon zest
1/3 cup lemon juice

MERINGUE:
1/2 cup sugar, divided
1/2 cup sugar, divided
1 tablespoon cornstarch
1/2 cup cold water
4 large egg whites
3/4 teaspoon vanilla extract

Directions

1. In a small bowl, combine flour and salt; cut in shortening until crumbly. Gradually add 3 tablespoons cold water, tossing with a fork until dough forms a ball. (I used the food processor to combine the dough)

2. Roll out dough to fit a 9-in. pie plate. (Using parchment paper folded over the disc of dough helps when rolling out, It makes it easier to roll, no sticking and transfer flawlessly to pie plate.) Transfer crust to pie plate. Trim to 1/2 in. beyond the rim of plate; flute edge. Bake at 425° for 12-15 minutes or until lightly browned.

3. Meanwhile, in a large saucepan, combine the sugar, cornstarch, flour, and salt. Gradually stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer.

4. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in butter and lemon zest. Gradually stir in lemon juice just until combined. Pour into the crust.

5. Place egg whites in a large bowl; let stand at room temperature for 30 minutes. For meringue, in a saucepan, combine 2 tablespoons of sugar and cornstarch. Gradually stir in cold water. Cook and stir over medium heat until the mixture is clear. Transfer to a bowl; cool.

6. Beat egg whites and vanilla until soft peaks form. Gradually beat in the remaining sugar, 1 tablespoon at a time. Beat in cornstarch mixture on high until stiff peaks form and sugar is dissolved (meringue will not be smooth). Spread evenly over hot filling, sealing edge to crust.

7. Bake at 350° for 25 minutes or until the meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

This was my first try at making a lemon meringue pie and I’m pretty excited about how it turned out. The crust was light and flaky while the lemon filling was firm and delectable. My husband and daughter thought it had way too much meringue but I disagree.

I’m excited about what TOH has for their baking challenge in June. Stay tuned!

I hope you make this recipe and if you do please use the #sassysilversisters and show us your pie. Do you like to make pies? What are your favorite pies to make?

Sign up for the challenge and share your accomplishments with us.

Restaurant Review - Craft and Crust Pizza Tavern Remington Virginia

  • Name of restaurant: Craft and Craft Pizza Tavern in Remington, Virginia

  • Date of visit: Thursday, April 21, 2022

    Star rating: ⭐ ⭐ ⭐ out of 5

We recently had lunch together at the Craft and Crust Pizza Tavern located at 204 East Main Street, Remington, Virginia 22734. We arrived around 11:45 thinking we’d beat the lunch crowd. It's a fairly new restaurant and seems to have been widely accepted in the community by their Facebook page. They serve brick oven pizza, along with antipasti, subs, salads, and a kid's menu. Also, local craft beer.

When we arrived at the location, the parking was readily available on the street. I’m sure on the weekends that would be a problem as the parking on the street is minimal. They have outdoor seating in the front of the building for those who want to enjoy eating outside. CCPT takes up one-half of the building and I believe they are working on adding an extra dining area in the vacant half of the building.

We walked in and noticed their special of the day board. We weren’t sure whether to wait for a waitress to be seated so we just grabbed a table. The dining area is roomy with farm art on the walls. They had a few TVs on the wall for those sports TV watchers. The kitchen is open in the back and in the front window area is where they have karaoke and live music on the weekends. They had music playing and was not too loud, which is a nice change because most restaurants have music playing and you can hardly hear yourself talk much less others in your party.

After waiting a few minutes, the waitress came to our table, gave us paper menus, and took our drink order. I wasn't too thrilled with the way the menus looked, maybe they can put them in a plastic sleeve to make them look more presentable, especially if they make changes often. She offered us the weekly special which was a personal pan cheese or pepperoni pizza along with a side salad.

We noticed right away the special pizzas named after the local towns in Fauquier County. What a fabulous tribute to the area.

They do offer gluten-free pizza for an extra charge. The prices for a pizza run from $16 on up. The sandwiches are under $15. The kid's menu items seem pricey at $8. I'm sure if that includes a drink.

We waited for about 10-15 minutes for our food. Cathy decided on the Crispy Chicken Parmesan Sandwich with red sauce and Sidewinder Fries. Both were very tasty. She had never had those fries before and she really enjoyed them.

Rhonda chose the weekly special. A huge side salad came out first with lots of fresh veggies and Ken’s pouch dressing. The pizza was crispy on the edges with cheesy pepperoni goodness.

I decided on the C & C Smash Burger with fries. The burger was topped with cheddar cheese, onions, tomato, pickle, and their special sauce. It was a very good burger and I would have it again. The fries were sidewinder fries that reminded me of steak fries but in a curly fashion. They were meaty and with just the right amount of seasoning. The meal was more than enough, I couldn't eat all the fries, what a pity.

All in all, it was a good experience. You can check them out on Facebook or on their website. You can order online starting at 11am. It doesn't look like they have delivery but you can order and pick it up.

  • Our rating system is 1 - 5 stars.

    • 1 ⭐ = Poor. There’s nothing good about the restaurant. We won't be returning.
    • 2 ⭐ ⭐ = Okay. The restaurant has one or two good qualities. It might be a delicious dish, helpful staff, or an inviting atmosphere. Still, you have no interest in visiting again.
    • 3 ⭐ ⭐ ⭐ = Good. A fine example of a specific kind of restaurant. It can be delicious food with excellent service. We may think about returning if we wish to have that particular cuisine.
    • 4 ⭐ ⭐ ⭐ ⭐ = Excellent. Delicious food, appealing atmosphere, helpful staff, and brilliant service.
    • 5 ⭐ ⭐ ⭐ ⭐ ⭐ = Extraordinary. Meets an elite standard by which you judge all other restaurants. The staff is always ready to help, the premises are extremely clean, the atmosphere is lovely, and the food is both delicious and beautifully presented.
  • We gave CCPT ⭐ ⭐ ⭐ ⭐  because of the menu thing. That just turned me off. The food was wonderful and we would definitely be going back. We do recommend you try it out when you are in Remington.

  • Enjoy the video Cathy made for your enjoyment.
