Semi Homemade Oatmeal Cookie Ice Cream Sandwich Recipe


Ok, here’s the thing. I was going to take the August Taste of Home Bakeable’s Challenge which was Almost It’s-It Ice Cream Sandwiches but after thinking about it, at the time I was going to make these, it had been in the mid ninety’s in Virginia and that’s too hot to start the oven. So I thought why not take a shortcut and buy the cookies pre-made?

You can use whatever cookie or flavor ice cream you desire. The TOH Bakeable's Challenge was making oatmeal cookies. I think chocolate chip cookies would be delicious too. Whatever your heart desires. 

Here's what you need and how to make them:

Ingredients


 
  • Bakery Oatmeal Cookies
  • Vanilla ice cream
  • Sprinkles, nuts, toffee bits, mini chocolate chips, etc.
  • Hardshell chocolate sauce 
Instructions

  1. Take the ice cream out of the freezer and let it sit for 10-15 minutes to soften.


  2. Place 1 scoop of ice cream (about 1/3 cup) between 2 cookies. Gently press cookies together (ice cream should spread to the edge of the cookies).  

  3. Roll ice cream edges in sprinkles or whatever you would like to roll them in. 

  4. Dip half of the sandwich in the hardshell chocolate sauce. 

  5. Eat immediately, OR to save for later, wrap sandwiches individually in plastic wrap. Place in a resealable freezer bag, and freeze until needed.

Cathy's Recipe Review of Cheddar Bacon Ranch Potato Salad

***UPDATED 8/5/23***



I recently came across this recipe and thought I would give it a try. It has All my favorite ingredients and it looked easy to make.

Cheddar Bacon Ranch Potato Salad Recipe 

Servings: 6

Prep is 15 minutes    Cook time is 30 minutes   Ready in 45 minutes


Ingredients

2 lbs petite red potatoes, diced into bite-size chunks (about 1-inch)

2/3 cup Hidden Valley® Simply Ranch Dressing

1 cup shredded cheddar cheese (I used medium)

6 slices bacon, cooked and crumbled (about 1/2 cup)

1/3 cup chopped green onions

Salt and pepper (optional)



Instructions

Cook potatoes in boiling water: allow to boil until potatoes are fully tender, about 10 minutes. 

Drain potatoes, and set them aside to cool.



Crisp the bacon. 


Pour cooled potatoes into a large mixing bowl. 

Add in ranch, cheddar, bacon, and green onions, and toss to coat. 



Season as desired.  If I were to take it to a party, I would top it with paprika.

My review...

I found this recipe very easy to make. Good potatoes really make a difference. Momma Sassy and I  thought smaller chunks of potatoes worked better. Overall, I would definitely make this scrumptious potato salad again! I hope you try it!

EVERYPLATE review

 

I've ordered from Everyplate before and it's my favorite out of all the other meal subscriptions. Most of the meals take 30 - 35 minutes to prepare. Since I had received an email with a great deal to come back, I just had to order from them once again.

It's pretty easy to order from them and you do have choices on how many you want to serve such as 2-4 people and meals per week from 3-5 days. You can choose your meal preferences: Meat and veggie, Veggie, Family friends, and Quick and easy.  

You can substitute your meals if you don't happen to like the selection they chose for you, which is a nice feature.

If you continue with the weekly subscription, they do give you a chance to skip a week, just make sure you make that choice by the end date for delivery. It is an overnight delivery and they have it packed with frozen packs to keep the perishable cold.

I ordered 5 days for 4 servings in my settings. The box was delivered before dinner time but it was in the 90's that day and the box was leaking from the condensation inside the box. The meats were no longer frozen but still super cold.

I went through the box and separated the produce, meats, and condiments into separate meal bags so it's easier for me to just grab them out of the refrigerator each evening. 

I wished I had thought about it sooner and I would have photographed the box from beginning to end of the opening. Oh well, maybe next time.

MY REVIEW: This recipe was a family favorite. It took around 35 minutes to make, and the caramelized onions were a sweet addition to top the chicken. The potatoes and carrots were cooked to perfection.

Sweet ’n’ Tangy Cherry Meatballs

with Roasted Zucchini & Garlic Mashed Potatoes


Cherry cola, cherry pie, cherry brandy, cherry... record scratch MEATBALLS?! It’s true, fam: Our chefs went there. This unexpected pairing, but once you dig in, you’ll quickly realize this duo is a straight-up match made in heaven. It’s sweet (cherry jam), savory (chicken stock), and a little kooky (ketchup!). 

MY REVIEW: Who doesn't like meatballs? Actually ME, I'm not a fan but these were really good. The sweet cherry jam ketchup topping was the best part. The garlic mashed potatoes were creamy and had just enough garlic. I cooked the zucchini a little longer because my hubby doesn't like crunchy half-cooked veggies. Cooked up in 35 minutes.

Sweet Chili Pork Tacos

with Red Cabbage Slaw, Zesty Crema & Peanuts

Tacos! There’s just something about ‘em that cannot be beat. Warm tortillas are piled with ponzu and chili sauce–simmered pork, crunchy cabbage slaw, tangy lime crema, and a scattering of peanuts. Once you dig in, you’ll be hit with a dose of vitamin T(aco) so intense, that you’ll forget that your usual tacos (or anything else for that matter) ever existed.

MY REVIEW: We liked the tacos but my hubby has a digestive issue in which he can’t eat raw cabbage and my daughter doesn’t like it. I loved the slaw but didn’t care for the peanuts. The directions said to add oil to fry the pork but it didn’t need it. The cooked meat was dripping with oil. Another quick 30-minute meal.

Buffalo Chicken Penne

with Spicy Panko and Scallion


If you’re thinking to yourself: Buffalo chicken is my favorite food and I wish I could eat it literally alllll the time, in every single type of cuisine. We combined all the best things about Buffalo chicken—you know, butter plus hot sauce—and threw it into penne to give you the creamy and spicy dinner of your dreams.

MY REVIEW: This dish was tasty and it wasn’t all that spicy. I didn’t use all the hot sauce which would have made it even spicier. My husband and daughter have issues with spices but they did like it. I would have liked for it to be more creamy and I think if I had added more pasta water that would have done the trick. It took about 35 minutes to make mainly because I had to cook the chicken in two batches.  

Garlicky White Sauce Flatbreads

with Tomato & Roasted Zucchini



Flatbreads > pizza, any dang day of the week. OK, we know that may sound blasphemous, but stick with us: First of all, the golden, crispy crust is a veritable blank canvas. It’s not beholden to simply marinara and mozz! In fact, ours is topped with a creamy, garlicky white sauce, Italian herbs and spices, roasted zucchini and tomato, and melty mozzarella. Can your ’za do that?! Yeah, we didn’t think so. MIC DROP!

MY REVIEW: This particular dish was not a favorite of my family. I think the chunky zucchini was a turn-off.  Since there were 4 of us and I knew my grandson wouldn’t eat it, I made a separate cheese pizza for him. I ended up with extra white sauce which I used for a breakfast pizza on the weekend. Nothing went to waste. It's good to try new things and I'm glad I tried this flatbread recipe.

Living in the Culpeper, Virginia area is always a treat to go to the historic downtown and choose from many restaurants. We decided to check out the 4 C's this time around on our monthly get-together.

The 4 C's is known for its Peruvian and South American cuisine but also serves your favorite sandwiches, burgers, pasta, breakfast dishes, and more.

The restaurant is situated right on Main Street with parking on the side of the road, which we do not recommend, it's a busy street during the lunch hour. We parked on the side of the building in a parking lot. 

As we entered the building, it brought us back to that old dinner that we are all familiar with. We didn't know whether to just seat ourselves or wait, so we just sat at a large dining table. There was plenty of seating available at the time we arrived. Once we found our seat we waited on the only waiter that was available. They did add a couple of waiters around noon. Our waiter was super friendly and helpful to us four old gals. We had lots of questions and he was patient.



It took a while for our food to arrive, but it took us more than a few minutes to decide what to order. Our order arrives at 12:25pm which is 50 minutes after arriving.

Cathy ordered the Papa Rellena which is fresh mashed potatoes filled with sauteed beef rolled, seasoned potato flour deep fried, and served with salsa Criolla. She loved it enough to go back and order it again. She also said she would take Momma Sassy for their popular breakfast.




Rhonda ordered the chicken and cheese quesadilla with salad. The plate looked nice with the salad in the middle of the sliced quesadilla. It didn't come with sour cream, so she asked for it and he brought it right away. The quesadilla was cooked just right, not overdone. It was full of flavor.




Mom ordered the Philly steak and cheese sub. She asked for grilled onions and they were happy to oblige. It looked good but not overly full. She didn't complain.


I wanted to try one of their Peruvian dishes and ordered the Aji De Gallina chopped chicken mixed with spicy cream sauce, onions & pecans, served with rice & side salad. It was simply creamy with enough spiciness to give it that bight that I love. The pecans give it a bit of crunch and mix it with the rice to make a spectacular dish. A must-try if you happen to stop by for a meal.


We decided to try out their desserts. We could see in the dessert case they had apple pie, cinnamon rolls, maple pie, and coconut cream cake. We ordered the apple pie ala mode and the coconut cake. The waiter was confused and brought cinnamon roll ala mode. We did tell him that he brought out the wrong dessert but we decided not to waste it and kept the dish. He didn't offer to take it off the bill but we weren't going to be jerks and ask for it to be taken off. We shared the desserts among the four of us and thought they were delicious. The cake was moist and had just enough frosting with it covered in coconut.

The prices were reasonable with the most expensive dish at $14.95 but that was a steak dinner. Their breakfast is super cheap considering what you get. See the menus below for more details.

All in all, it was a good experience. You can check them out on Facebook or on their website. You can order online starting at 11am. It doesn't look like they have delivery but you can order and pick it up.

    • 1 ⭐ = Poor. There’s nothing good about the restaurant. We won't be returning.
    • 2 ⭐ ⭐ = Okay. The restaurant has one or two good qualities. It might be a delicious dish, helpful staff, or an inviting atmosphere. Still, you have no interest in visiting again.
    • 3 ⭐ ⭐ ⭐ = Good. A fine example of a specific kind of restaurant. It can be delicious food with excellent service. We may think about returning if we wish to have that particular cuisine.
    • 4 ⭐ ⭐ ⭐ ⭐ = Excellent. Delicious food, appealing atmosphere, helpful staff, and brilliant service.
    • 5 ⭐ ⭐ ⭐ ⭐ ⭐ = Extraordinary. Meets an elite standard by which you judge all other restaurants. The staff is always ready to help, the premises are extremely clean, the atmosphere is lovely, and the food is both delicious and beautifully presented.
  • We gave The 4 C's ⭐ ⭐ ⭐ ⭐  because it took almost an hour to receive our food and the waiter got our dessert wrong.  The food was wonderful and we would definitely be going back. We do recommend you try it out when you are in Culpeper, Virginia.

Top 10 Foods to Stock Up on NOW

Are you shocked by the price increase in food lately? I sure am, so I've started stocking up on non-perishable foods. I'm not really what you call a prepper but with the way the world is right now, I don't think it will hurt to have a stockpile of food. 

My suggestion on canned goods is, if you have an Aldi store nearby, shop there for your canned goods. They are cheaper than most grocery stores I shop and the quality is the same or even better. My husband loves their soups.

Storage was a problem for us so we decided to buy a couple of cabinets to store our food. They didn't take long to put together and they look attractive. You can use whatever space you have but I suggest you designate a space for a large amount of food.

If you start storing up food, make sure when you use a food item that you replace it and put the newer product in the back, that way you won't have to worry about expiration dates.

What are the top 10 foods? I've come up with a list of foods that we are stocking in our pantry.

  1. Beans: Dried and canned - Dried Pinto Beans, Canned Chickpeas, Dried Lentils, Canned Baked Beans
  2. Canned Goods: Tomatoes, other vegetables, fruits, canned meat, chicken, and fish 
  3. Fats: coconut oil, and olive oil
  4. Milk: Powdered/Dried, preferably low temp dried (Note: Non-fat powdered/dried milk will be the most shelf stable.) 
  5. Nut Butters
  6. Pasta: Dried, all shapes, and sizes
  7. Rice: White rice, such as long grain or basmati, will be the most shelf-stable 
  8. Salt: Both iodized salt and sea salts 
  9. Sugar: White, Honey, Molasses, Maple Syrup, etc. 
  10. Wheat Products: All-purpose flour or bread flour, as well as the actual whole grain & Bread Baking, Needs -Including packaged yeast, baking powder, baking soda, and barley malt
