Ingredients

  • 1 pound chicken legs, or thighs
  • 2 cups broccoli florets
  • 1 sweet potato
  • Barbecue sauce, your choice
  • Olive oil
Steps

  1. Preheat the oven to 400 degrees.
  2. In a large bowl, mix together the sweet potato cubes with olive oil, and sprinkle some salt and pepper. Add it to one side of the sheet pan.
  3. Add the broccoli to the middle and coat them with olive oil.
  4. Add the chicken legs to the remaining side of the pan and brush on that barbecue sauce.
  5. Roast in the oven for 30 minutes, or until the chicken is officially done.
  6. Before serving, brush on a second layer of barbecue sauce to the chicken.

Ingredients

  • teaspoons kosher (coarse) salt
  • teaspoons garlic powder
  • teaspoons chili powder
  • lb uncooked chicken breast tenders (not breaded)
  • tablespoons unsalted butter
  • cup whipping cream

Steps

1.   In small bowl, stir together 2 teaspoons kosher salt, 2 teaspoons garlic powder and 2 teaspoons chili powder. Sprinkle over 1 lb uncooked chicken breast tenders (not breaded) to completely coat.

2.   In 10-inch skillet, melt 2 tablespoons of the unsalted butter over medium-low or medium heat. Add coated chicken tenders; cook 3 to 4 minutes on each side or until browned and no longer pink in center. Transfer chicken to plate; set aside.

3.  In same skillet, heat 1 cup whipping cream, scraping up any brown bits from bottom of skillet. Increase heat to simmer or until cream comes to a boil. Reduce heat; simmer until cream is reduced by half. Stir in remaining 2 tablespoons unsalted butter. Season to taste with salt. Return chicken to skillet.

Kale Salad with Quinoa & Chicken

Ingredients

  • 4 cups chopped kale
  • 1 ½ cups shredded cooked chicken
  • 1 cup cooked quinoa
  • ¼ cup sliced jarred roasted red peppers
  • ¼ cup Greek salad dressing (see Tip)
  • 1 ounce Crumbled feta cheese

Steps

 

1.      Place kale, chicken, quinoa and roasted peppers in a large bowl. 

2.     Add dressing and toss to coat. 

3.     Top with feta, if desired.

  1. Preheat oven to 375ºF. Line a large-rimmed baking sheet with parchment.

  • 2 pounds boneless skinless chicken breasts or thighs

Steps

  2. Cover and cook on high for 4 hours or low for 6, or until the chicken and vegetables are very tender.
  3. Uncover and remove the chicken to a cutting board. Shred with two forks or cut into pieces.
  4. If there is a lot of liquid in the slow cooker you can drain some off or leave it all in, depending on whether you want a drier or saucier consistency.
  5. Add back the chicken, the remaining salsa, and lime juice, stirring everything together. Taste and add additional salt, lime juice or salsa if you like.



Sweet Potato Gnocchi Recipe (Roasted, With Chicken Sausage) | The Kitchn

INGREDIENTS

  • (12-ounce) package fully cooked Trader Joe's Sweet Italian Chicken Sausage, sliced

  • (14-ounce) bag frozen Trader Joe's Sweet Potato Gnocchi

  • tablespoons 

    olive oil

  • 1/2 cup 

    Trader Joe's Kale, Cashew & Basil Pesto

  • Kosher salt and freshly ground black pepper, to taste
STEPS
  1. Arrange a rack in the middle of the oven and heat to 450°F.
  2. Place chicken sausage on a rimmed baking sheet with the sweet potato gnocchi. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Spread in an even later and roast until the gnocchi is plump and lightly browned and the sausage is warmed, about 15 minutes. Drizzle with pesto and toss to coat.

Cathy Reviews Walking Taco Casserole Recipe

What is  'Walking Taco"?  You take a small bag of corn chips or Doritos open it up and put seasoned taco meat over the chips along with your favorite taco topping such as lettuce, taco sauce, tomatoes, onions, and cheese on top.  You can then walk around eating this right out of the bag with a fork.  

This is a spin on the Walking Taco but in casserole form which is perfect for teens and family gatherings.



INGREDIENTS
  • 1  1/2 lbs.- 2 lbs. ground beef
  • 1  (1 oz.) pkg taco seasoning
  • 3/4 cup water
  • 1 (15.5) oz. pkg Fritos
  • 3 cups shredded Mexican blend cheese
  • taco toppings of your choice...taco sauce, diced onions, olives, diced tomatoes, sour cream, guacamole.



INSTRUCTIONS

  1. Preheat the oven to 350 degrees.  
  2. Spray a 9"x 13" baking dish with nonstick spray.  
  3. Spread half of the Fritos in the bottom of the dish.
  4. In a skillet brown the ground beef, add the taco seasoning and water, and mix until blended.  Place 1/2 of the seasoned ground beef over the corn chips and top with half of the shredded cheese.
  5. Repeat the layers, Fritos, and taco meat, and end with the rest of the cheese. 


  6. Place in the oven and bake for 15 to 20 minutes or until the cheese is melted.
  7. To serve set out taco toppings of your choice and let everyone garnish their own serving!

My review:

Well, this was very easy to do and makes a lot. I love tacos and this was a good treat for me and Momma Sassy.

Next time I will not make as much and will also separate the ingredients to add as I go. The reason is, that the chips are soggy if you have any leftovers. I would leave out the olives because I prefer black beans.
But other than that, all good!

Try it one plate at a time, if you do not have a crowd to feed. All you have to do is add chips, meat, and cheese to a plate and heat in a microwave or toaster oven to melt the cheese. Then add your toppings!

Ham Broccoli and Cheddar Soup with Flaky Cheddar-Chive Garlic Biscuits

 

Normally our blog goes out on Monday morning but I made this delicious soup with biscuits this week and thought maybe you would like to try it this weekend.

Since it's getting colder outside, soup is always on the menu at our house. This particular soup,  Ham Broccoli and Cheese Soup is fairly easy and oh so good!. The biscuits remind me of Red Lobsters biscuits and if you haven't made biscuits before, you need to make these.

Ingredients
  • 1 bunch broccoli, cut (or about 4 cups frozen florets)
  • 1 stick butter
  • small onion, diced
  • 1/2 cup flour
  • 6 cups chicken broth
  • 4 cups milk, warmed
  • 2 tsp. Worcestershire sauce
  • 1 cups cheddar, shredded
  • 2 cups diced ham

Instructions

  1. Steam the broccoli until tender.
  2. In a large pot, melt the butter and cook the onion till soft.  Stir in the flour and cook for a minute or two.  Whisk in the chicken broth.  Add the warm milk and Worcestershire sauce.  Heat over medium heat till the soup is hot.
  3. Drain the broccoli and add to the soup.  Stir in the cheese and ham.  Season with salt and pepper.  (Be careful adding salt before tasting because the ham may give you enough saltiness) Serve with extra cheese, if you like.



Flaky Cheddar-Chive Garlic Biscuits from Taste of Home
I added the garlic powder because we love garlic. Also, I used a food processor to mix the dry ingredients with the butter, it makes it easier to incorporate the butter. I didn't have fresh chives or buttermilk instead I used dried chives about 1.5 Tablespoons and added 1 Tablespoon of vinegar to milk in order to make the buttermilk. I make do and improvise quite a bit.

Ingredients

  • 2-1/4 cups all-purpose flour
  • 2-1/2 teaspoons baking powder 
  • 2 teaspoons sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup cold butter, cubed
  • 1 cup shredded cheddar cheese
  • 3 tablespoons minced fresh chives
  • 1 cup buttermilk
Instructions
  1. Preheat oven to 425°. In a large bowl, whisk the first five ingredients. Cut in butter until mixture resembles coarse crumbs; stir in cheese and chives. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times.
  2. Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm.
This meal took about 30-40 minutes to make. My goal in the kitchen is to get dinner on the table within 45 minutes from start to finish.
