Ingredients

·         1 pound Brie cheese, rind removed

·         1 package (17.3 ounces) frozen puff pastry, thawed

·         2/3 cup whole-berry cranberry sauce

·         1 large egg

·         1 tablespoon water

·         1/2 cup chopped pecans

Directions

·         1. Preheat oven to 400°. Beat trimmed Brie on medium until smooth and creamy, about 5 minutes.

·         2. On a lightly floured surface, unfold 1 sheet puff pastry; spread half the Brie to within 1/2 in. of edges. Spread half the cranberry sauce over the Brie. Starting with a short side, roll up jelly-roll style. Cut crosswise into 12 slices. Place pastries on parchment-lined baking sheets. Whisk egg with water; brush over slices. Sprinkle with chopped pecans. Repeat with remaining ingredients. Bake until golden brown, 15-20 minutes.


2. Easy Apple Turnovers: Apple turnovers are a classic pastry that can be made in a jiffy. Start by preheating your oven and preparing a sheet of puff pastry. In a separate bowl, mix together diced apples, sugar, cinnamon, and a pinch of salt. Place a spoonful of the mixture onto the pastry sheet and fold it over to create a triangular turnover. Bake them for 20 minutes until they are golden brown and enjoy a warm and fruity pastry that tastes just like homemade apple pie.

·         2 cups small diced (peeled) apples

·         1 Tablespoon brown sugar

·         1/2 teaspoon cinnamon

·         1 Tablespoon lemon juice

·         1 (17.3-oz.) package of frozen puff pastry (2 sheets), thawed

·         Flour, for dusting work surface

·         1 large egg, whisked

·         Crystal sanding sugar (optional)

Instructions 

  1. Preheat the oven to 400°F. Line two baking sheets with parchment paper or Silpats.
  2. In a large bowl, stir together the apples, brown sugar, cinnamon and lemon juice.
  3. Unfold the puff pastry sheets onto a lightly floured work surface. Using a rolling pin, gently roll over the pastry to seal any perforations then cut each sheet into 4 squares.
  4. Using a slotted spoon, scoop a portion of the apple mixture into the center of each puff pastry square then fold the pastry across diagonally to form triangles. Using a fork, crimp together the edges then transfer the turnovers to the prepared baking sheets, spacing them at least 2 inches apart.
  5. Cut three small slits in the tops of each turnover then brush them with the egg. Sprinkle the turnovers with the sanding sugar (optional).
  6. Bake the turnovers for 17 to 20 minutes or until they’re golden brown and puffed. Transfer the turnovers to a rack to cool then serve warm or at room temperature. 


3. Quick and Simple Quiche: Quiche is a rich and savory dish that can be served as a main course or as a side dish. And the best part is that it can be made in just 30 minutes. All you need is a pie crust, eggs, milk, cheese, and your choice of fillings (such as spinach, mushroom, or bacon). Ingredients

·         1 refrigerated pie crust

·         6 large eggs

·         ¾ cup milk or cream

·         ¾ teaspoon salt

·         ¼ teaspoon black pepper

·         1 cup cooked ham chopped

·         1 ½ cups shredded cheese divided

·         3 tablespoons green onions

Instructions

  1. Preheat oven to 375°F.
  2. Unroll the pie crust and press into a 9" pie plate, crimping the top edges if desired.
  3. In a large bowl, whisk together eggs, milk, salt and pepper.
  4. Sprinkle ham, 1 cup of cheese, and green onions into the pie crust and pour the egg mixture over top. Sprinkle the remaining ½ cup cheese on top of the egg mixture.
  5. Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.


4. Shortcut Cinnamon Rolls: Cinnamon rolls are a breakfast favorite that can be made in a quick and easy way. Instead of making the dough from scratch, you can use store-bought crescent rolls for a shortcut version. Spread butter, sugar, and cinnamon on the crescent rolls and roll them up. Bake for about 15 minutes and drizzle a simple glaze made of powdered sugar and milk over the warm rolls. These gooey and delicious cinnamon rolls will be a hit with the whole family.

·         2 cans crescent dough sheets

·         5 tablespoons butter salted, melted

·         ¼ cup brown sugar (dark or light brown, packed)

·         2 teaspoons ground cinnamon

Cinnamon Roll Icing

·         2 cups powdered sugar

·         2 tablespoons butter salted or unsalted, melted

·         2 teaspoons vanilla extract

·         4 tablespoons milk Whole, 2% or whatever you have on hand

Instructions

1.                   Preheat oven to 350℉

2.                  Unroll crescent sheets onto parchment paper.

3.                  Brush butter onto crescent sheets.

4.                  Combine brown sugar and cinnamon. Sprinkle onto dough.

5.                  Roll the dough and slice each log into 12 pieces.

6.                  Place in a buttered casserole/baking dish. Bake 26-28 minutes.

1.                   Meanwhile, combine powdered sugar, melted butter, vanilla and milk.

2.                  Pour over rolls and serve.

 

5. No-Bake Chocolate Tart: If you're looking for a quick and easy dessert, this no-bake chocolate tart is the perfect recipe for you. Crush some graham crackers and mix them with melted butter to form a crust. Fill the crust with a mixture of melted chocolate and cream, and let it set in the fridge for a few hours. Ingredients  

Crust:

·         12 graham cracker sheets

·         ½ cup unsalted butter melted

·         3 tbsp granulated sugar

Filling:

·         1½ cups heavy cream

·         3 cups chocolate chips I like to use a blend of milk, semi-sweet, and dark.

·         3 tablespoons granulated sugar

Topping:

·         ½ cup heavy cream

·         1 tablespoon granulated sugar

·         Sprinkles optional


Instructions

Crust:

  • Add graham cracker sheets to a blender or food processor and blend until fine crumbs form. Transfer crumbs to a medium bowl, add in the melted butter and the sugar, and stir until evenly moistened.
  • Transfer the crust mixture to a 10-inch tart pan or springform pan and press crumbs evenly into the bottoms and up the sides.

Filling:

  • Add chocolate chips and sugar to a medium bowl and set aside.
  • In a small saucepan over medium-high heat, bring the heavy cream to a simmer then pour it over the chocolate chips and let set for 4 to 5 minutes.
  • After the time is up, whisk until rich chocolate develops and pour into the prepared graham cracker crust.
  • Chill in the refrigerator for at least 4 hours before serving.

Topping:

Just before serving, whip heavy cream and sugar until light and fluffy and pipe onto the tart, sprinkle with chocolate sprinkles if desired. Serve chilled.

Easter Brunch Menu


My family is hosting Easter brunch this year and I've come up with a menu that everyone will love, even the kiddos.

Instant Pot Ham

This ham is juicy, flavorful and so easy to make with a spiral-sliced ham and sweet maple glaze that warms up in the pressure cooker. Comes together in less than 30 minutes and is perfect for your Easter table!

Ingredients

  • 4 pounds spiral-sliced ham, 4 lbs fits perfectly in a 6 qt. IP
  • 1/4 cup unsalted butter 
  • 3 tablespoons Dijon mustard
  • 2 tablespoons granulated brown sweetener of choice 
  • 2 tsp minced garlic

Instructions

  1. Prepare the glaze: Heat the butter and sweetener in a small pot over medium-low heat until the butter has melted. Whisk in the mustard and garlic until combined. Remove from heat.

  2. Insert a trivet inside the inner pot of the pressure cooker. Pour in 1 cup water.

    Place the ham on the trivet and brush the mustard glaze over the ham on the outside and inside the spirals of the ham.

  3. Close the lid and press the "manual" or "pressure cook" button and set the timer to 9 minutes. The pressure cooker may take 10 minutes to come to pressure. Once cook time has elapsed, allow the Instant Pot to naturally release all the pressure (around 10 minutes).

    Carefully open the lid and transfer the ham to a cutting board. Serve with any leftover glaze.

  4. For an extra-caramelized coating - set the oven to broil. Remove the ham from the pressure cooker and place it on a foil-lined baking sheet and brush it with leftover glaze.

    Place the ham under the broiler for 2-3 minutes or until the glaze is bubbly and caramelized.

  5. Slice ham and serve warm with preferred side dishes.

Easter Bunny Cinnamon Rolls

These adorable bunny cinnamon rolls are so easy and make a great treat for Easter morning.

Ingredients
  • 1 can of store-bought cinnamon rolls with icing
  • Easter color sprinkles
  • Easter colored M&Ms

Instructions


  • Preheat the oven according to the package directions on the canned cinnamon rolls. Separate the cinnamon rolls so you can start forming each one into the bunny shape. 
  • Use your hands to pull the outer end out and up into one bunny ear and then another bunny ear. Press down between the two bunny ears and in on the outsides of the bunny ears to secure them to the round part of the cinnamon roll. Transfer them to a baking sheet and reinforce the shape, if necessary, so each one looks like a bunny.
  • Place them in the oven and bake according to the package. Halfway through the baking time, remove the bunny cinnamon rolls from the oven and reinforce the shape with the handle of a spoon, be careful as they will be warm to the touch.
  • Place the bunny rolls back in the oven to finish baking. Once baked, remove them and drizzle with icing while still warm. Immediately sprinkle with festive sprinkles and garnish with two round candies for the eyes and nose.

Bacon, Potato, and Egg Casserole

This casserole can be made in advance. Pour the mixture into a pan and refrigerate for up to 24 hours, bake when ready to eat.

Ingredients

  • 1 lb bacon, cut into 1/2-inch strips
  • 1 yellow onion diced
  • 1 red bell pepper seeds removed and diced
  • 3 cloves garlic minced
  • 12 large eggs
  • 1 cup milk
  • 3 cups frozen diced potatoes you don't have to thaw or cook the potatoes
  • 2 cups shredded cheddar cheese divided
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 green onions chopped

Instructions

  • Heat the oven to 350°F. Grease a 9x13 baking dish with nonstick cooking spray and set aside.
  • In a large skillet, cook bacon over medium heat, stirring occasionally. Cook until it is a nice crispy brown. Remove bacon with a slotted spoon and place on a paper towel-lined plate. Roughly chop the bacon and set aside.
  • Add the onion and red pepper to the skillet and cook over medium heat until tender. Add the garlic and cook for 2 minutes. Set aside.
  • In a large bowl, beat the eggs and whisk in the milk. Stir in the cooked vegetables, potatoes, and 1 cup of shredded cheese. Set 3/4 cup of bacon aside and stir in the rest. Season with salt and pepper.
  • Pour the mixture into the prepared baking dish and top the remaining cheese and green onions. Bake for 20 minutes so the eggs start to set up. Carefully add the remaining bacon to the top of the casserole. Bake for an additional 20 to 30 minutes or until the eggs are firm and the top is slightly golden brown. Let stand for 10 minutes. Cut into squares and serve warm.

Fruit Salad 

The best tip I can give you for making the best fruit salad is to make sure your fruit is fresh. You don't want overripe fruit or smushy fruit, or fruit that will turn brown quick, such as apples and bananas.

Make sure you cut the fruit in similar sizes.

Toss with citrus juice and not sugar. 

Garnish with fresh herbs or spices. Mint, poppy seeds, or a dash of chili powder (for tropical salads) make great additions. Optional, of course.

Ingredients

  • 2 cup strawberries halved
  • 2 cup red grapes
  • 2 oranges (slice in rounds then quarter)
  • 3 kiwis (slice in rounds then quarter)
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 3 tbsp citrus juice 
  • 1 tsp citrus zest

Instructions

  • Toss fruit in a large bowl with the juice and zest. Let sit for 5 minutes before serving.

Sparkling Juice

My favorite sparkling juice is Welch's Sparkling Red Grape. My family loves this stuff. You can buy it at most grocery stores.
