Thanksgiving is this week and we hope you have things you are thankful for. I happen to be thankful that I will have leftover turkey after our Thanksgiving meal. This recipe, Turkey Dumpling Stew, is a great way to use use it up, is delicious and extremely easy to make.
I made this a while ago and wanted to save this blog post until this week, seeing it's that time of year for gobbling up the turkey. When I made this, I had some green beans leftover and thought, why not! You can customize this recipe with whatever leftover meat and veggies you may have leftover.
TOTAL TIME: Prep: 20 min. Cook: 50 min.YIELD: 6 servings.
Ingredients
4 bacon strips, finely chopped
1-1/2 pounds turkey breast tenderloins, cut into 1-inch pieces
4 medium carrots, sliced
2 small onions, quartered
2 celery ribs, sliced
1 bay leaf
1/4 teaspoon dried rosemary, crushed
2 cups water, divided
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 to 1/4 teaspoon pepper
1 cup reduced-fat biscuit/baking mix
1/3 cup plus 1 tablespoon fat-free milk
Optional: Coarsely ground pepper and chopped fresh parsley
Directions
1. In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Reserve 2 teaspoons drippings.
2. In drippings, saute turkey over medium-high heat until lightly browned. Add vegetables, herbs, 1-3/4 cups water and broth; bring to a boil. Reduce heat; simmer, covered, until vegetables are tender, 20-30 minutes.

4. In a small bowl, mix biscuit mix and milk to form a soft dough; drop in 6 mounds on top of simmering stew. Cover; simmer 15 minutes or until a toothpick inserted in dumplings comes out clean. If desired, sprinkle with pepper and parsley before serving.
We hope you enjoy this recipe and if you happen to make it, please comment and share your thoughts. We are always looking for recipes and if you have a favorite turkey soup recipe, send it our way!

We had a challenge recently to use old or new wooden spoons decorated in a Christmas motif. This was so much fun and some folks really did create some unique spoons. Maybe you can design your own with a little inspiration from these wonderful ladies who participated in the challenge.
Joyce Edstron did a fantastic job on her spoons
Kelly Flickinger and her Upside Down Santa and Elves
Cathy Wright and her Ornaments
Rhonda Byler and her Snowman Bunch
Thank you to all those that participated and we hope we gave you some incentive to a DIY project for the upcoming holidays.

Normally our blog goes out on Monday morning but I made this delicious soup with biscuits this week and thought maybe you would like to try it this weekend.
Since it's getting colder outside, soup is always on the menu at our house. This particular soup, Ham Broccoli and Cheese Soup is fairly easy and oh so good!. The biscuits remind me of Red Lobsters biscuits and if you haven't made biscuits before, you need to make these.
1 bunch broccoli, cut (or about 4 cups frozen florets)
1 stick butter
small onion, diced
1/2 cup flour
6 cups chicken broth
4 cups milk, warmed
2 tsp. Worcestershire sauce
1 cups cheddar, shredded
2 cups diced ham
Instructions
Steam the broccoli until tender.
In a large pot, melt the butter and cook the onion till soft. Stir in the flour and cook for a minute or two. Whisk in the chicken broth. Add the warm milk and Worcestershire sauce. Heat over medium heat till the soup is hot.
Drain the broccoli and add to the soup. Stir in the cheese and ham. Season with salt and pepper. (Be careful adding salt before tasting because the ham may give you enough saltiness) Serve with extra cheese, if you like.
I added the garlic powder because we love garlic. Also, I used a food processor to mix the dry ingredients with the butter, it makes it easier to incorporate the butter. I didn't have fresh chives or buttermilk instead I used dried chives about 1.5 Tablespoons and added 1 Tablespoon of vinegar to milk in order to make the buttermilk. I make do and improvise quite a bit.
Ingredients
2-1/4 cups all-purpose flour
2-1/2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 cup cold butter, cubed
1 cup shredded cheddar cheese
3 tablespoons minced fresh chives
1 cup buttermilk
Instructions
Preheat oven to 425°. In a large bowl, whisk the first five ingredients. Cut in butter until mixture resembles coarse crumbs; stir in cheese and chives. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times.
Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm.
This meal took about 30-40 minutes to make. My goal in the kitchen is to get dinner on the table within 45 minutes from start to finish.
I hope you make this soup and biscuit combo soon, your tastebuds won't regret it.
Stay safe and healthy,
Kelly

This is the 5th Edition variety, ARE YOU BRAVE ENOUGH to try!!
I'm not sure who won this game and just maybe you can figure it out for us.
We hope you enjoy our fun and laughter!!
Take the BeanBoozled Challenge for yourself and see if your flavor will be yuck or yum… we dare you!
Have you taken the challenge with your friends and family? Let us know in the comments!

On our last
day in Kentucky, my husband and I went to the Newport Aquarium, located at 1
Levee Way, Newport, Kentucky.It was
fairly easy to get to the parking garage. Then you can walk downtown or right by the entrance to the aquarium
there are vendors and shops for different foods.
The aquarium
is right on the river. You can stroll
along the river or cross this bridge into Cincinnati, Ohio. The building has artwork and beautiful
flowers along the riverside.
As you can
imagine, there were lots to see inside the aquarium as well.Fish, sharks, seahorses, octopus, crabs,
lobsters, frogs, snakes, and on and on.Lots to see for all ages.
Upside down
jellyfish and this octopus was on the move.
It does not
take all day for the aquarium. So if you
go, just drive around and see the sites.Leroy and I enjoy doing that.
We had a
great time in Kentucky.I hope you get
to go and experience some of the fun.
Have you been to Newport Aquarium? We would love to hear about your experience.
Stay safe and healthy,
Rhonda
