Refreshing Pineapple Cucumber Salad is so easy to make! Sweet, tangy, and crunchy!  We are starting to have hot days and this is perfect for that!  If you have a bunch of cucumbers from your garden, use them for salads !  Here is the recipe since clicking the link seems to be too full of ads I couldn't get through them all.  Ingredients For the Salad: 2 cups fresh pineapple, diced 1 large cucumber, diced (or 2 small cucumbers) ½ small red onion, thinly sliced ¼ cup fresh cilantro or mint, chopped 1 small jalapeno, finely chopped (optional, for heat) ½ cup cherry tomatoes, halved (optional) For the Dressing: 2 tbsp fresh lime juice 1 tbsp honey or maple syrup ½ tsp salt (adjust to taste) ¼ tsp black pepper ½ tsp chili flakes seasoning (optional) Instructions 1.
