Sweet Easter Nest Donuts Recipe
These Sweet Easter Nest Donuts are extremely cute and delicious. They take no time to make and are simply adorable.
The original recipe comes from Country Crock and after looking at the recipe I decided I would try it with a cake mix. You need a donut pan or maker, obviously, to make these donuts. I purchased a set of silicone donut molds on Amazon. Once upon a time, I had an electric donut maker and I have no idea what I did with it, probably donated it to Goodwill.
The original recipe makes 6 servings but since I was using a cake mix, it made 2 dozen. You can also use a small box of cake mix if you don't want to make as many. In our household, donuts do not last long.
Let's get started making donuts!
Ingredients:
Supermoist Vanilla Cake Mix or your favorite cake mix
1 C of water
1/2 C vegetable oil
3 eggs
Chocolate Glaze:
8 oz bittersweet chocolate chips
2 T light corn syrup
1 Stick of butter, hot and melted
1/2 t kosher salt
Topping
3 C sweetened shredded coconut
Instruction:
- Preheat the oven to 350°F. Brush or spray the donut pan with butter or non-stick spray.
- Make the cake mix according to box instructions.
- Spoon the batter into the prepared donut pan. Bake for 10-15 minutes, until the donut springs back when gently poked. Let cool in the pan for 5 minutes before overturning the donuts onto a wire rack to cool completely before glazing.
- Toast the coconut on a cookie sheet tray after baking the donuts.
- Once the donuts are cool, prepare the glaze. Combine the chocolate chips and corn syrup in a heat-proof bowl. Microwave it at 30-second intervals. Stirring until melted. Add the hot melted butter and salt, stir until completely smooth. Let sit for 5 -10 minutes to cool and thicken a bit.
- Dip the donuts in the glaze then dip them in the coconut.
- Place your chocolate eggs in the middle.
***NOTE - fill the donut pan cavities 3/4 full because you will get a well rounded donut. Also, if you let them set up, the glaze will harden.***
