Let’s Celebrate National Oatmeal Month with 10 Recipes

In January, National Oatmeal Month declares it’s possible to create healthy changes with this grain. Celebrate all month long by incorporating oatmeal in your breakfast and snacks. 

Do you love oatmeal as much as I do? I think oatmeal is underrated. You can do so much with it besides eating it in a bowl. You can make yummy granola, and muffins, add them to smoothies, and a multitude of other delicious food items. It's not only good to eat, you can make a face mask, and add it to a bath to relieve itchy skin.

I found 10 recipes that are not only delicious but good for you. All these recipes come from Delish. You can subscribe to Delish $3 a month or $20 annually. They have some wonderful recipes. 


Cooking the oatmeal in coconut milk gives this bowl a subtly sweet flavor and extra-creamy texture. Topped with mango and toasted coconut flakes, each bite gets you one step closer to the Tropics.



Yes, we love apple pie so much that we turned it into oatmeal. Drizzled with caramel, it's a breakfast you won't forget.

Banana Split Oatmeal



The beloved sundae has ingredients we'd normally top on oatmeal: banana, walnuts, and chocolate chips. Oh, and sprinkles, which we're always looking for an excuse to eat for breakfast.

S'mores Oatmeal


You can't act surprised that we found a way to turn an otherwise totally healthy bowl of plain oatmeal into a vehicle for s'mores toppings. Whether you're eating this as a YOLO breakfast or low-guilt dessert, it's a winner.


Maple Bacon Oatmeal



We're still looking for a food that doesn't work well maple bacon flavored. This ain't one of them.

Oatmeal with Cranberries and Pistachios



If you're the type who doesn't want mini marshmallows and chocolate stirred into oatmeal (we know you're out there somewhere), we got you: Top with maple syrup, cranberries, and pistachios. 

Oatmeal with Apples, Pecans, and Cinnamon



Infused with apples, this oatmeal has all the fall flavors you love most. One of my personal favorites.

Triple Chocolate Oatmeal



We're in love with that cocoa: Stirring cocoa powder into cooked oatmeal and topping it with mini chocolate chips is our dream.

No Bake S’mores Recipe by The Pioneer Woman

I don't know about you but it's way too hot to be roasting marshmallows, even though I LOVE them. Recently I found a recipe for No Bake S'mores Bars by the Pioneer Woman and decided it's a great time to get my roasted s'mores and not sweat to death LOL!
Plus, these would make a great treat for the upcoming 4th of July.

Ingredients

  • Nonstick cooking spray, for the pan
  • 4 T salted butter
  • 10 oz. bag mini marshmallow
  • 12 oz. bag of semisweet chocolate chips
  • Pink of salt
  • 9 graham crackers, broken into pieces
  • 1/4 C mini chocolate-coated candies
  • 2 T rainbow sprinkles
Directions
  1. Line a 9" square baking pan with waxed paper, overlapping all 4 sides. Spray with cooking spray.
  2. Place a nonstick pan over low heat and add the butter. When melted, add 2/3 of the marshmallows and cook, stirring, until the marshmallows have melted and combined with the butter, about 3 minutes. Next, fold in the chocolate chips and stir until they are melted. Add the salt and half o the broken graham crackers and stir so the cracker pieces are incorporated into the chocolate marshmallow mixture but not broken up too much.
  3. Tip the mixture into the prepared pan and press it into the pan with a wooden spoon. Sprinkle over the remaining graham crackers and marshmallows, pressing them down with your hands so they set into the base. Next, add the coated candies and sprinkles and press them down.
  4. Allow to set for 1 hour before removing from the pan and cutting into bars. Or you can chill for 10 minutes and slice if you're in a hurry.
I like the marshmallows toasted so I put the bars in the broiler before adding the sprinkles and candies then cooled them. Make sure you pay attention while broiling, it doesn't take long to get them toasty.



Here is the finished product. They were ooey-gooey, chocolatey, marshmallowy GOODNESS.

Pinterest Lephrechaun S'mores NAILED IT --- NOT!!

For our  February LIVE Facebook video, we thought we'd try out a Pinterest project of these adorable Leprechaun Hat & S'more's. How good do they look? Chocolate, Keebler's striped cookies and marshmallows. What's not to love about that?


As you can see by our attempt on LIVE video, they didn't turn out to half bad. We didn't dip the whole cookie in the chocolate like the directions said to but for time sake that part worked out fine. We dipped the marshmallows in the chocolate with toothpick and set them on a plate, put them in the freezer for a bit. After taking them out of the freezer, we dipped one side in chocolate to attach to the cookie. This is where we failed. We should have dipped the chocolate covered marshmallows in the green chocolate then dipped them in the green sugar. Our attempt to make a shamrock failed also.

It was all in fun and if you want to try and make them yourself, we would suggest taking a bit more time than we did. Have some fun and make these!! They were delicious!! Make them with your kids or grandkids.

Baker House Creations German Chocolate Cookie Review


Thanks to Rhonda for baking us girls some cookies, Baker House Creations German Chocolate Cookies to be exact. We thoroughly loved them. They were moist, with lots of coconut, dark chocolate and nuts. She bought them at Aldi, if you are interested. They may or may not have them, as Aldi doesn't always carry items throughout the year.
