St. Patrick's Day Dinner Menu 2021

***UPDATED 3/4/23*** St. Patrick’s Day observes the death of St. Patrick, the patron saint of Ireland. The holiday has evolved into a celebration of Irish culture with parades, special foods, music, dancing, drinking, and a whole lot of green.  Remember when you were in school and if you weren't wearing green you were pinched? I always tried to wear green 🤣 Do you blame me? 🍀 I don't know about you but we love to celebrate St. Patrick's Day with food. I'm not sure we have any Irish in us but we can all celebrate along with those that are Irish. Ireland is well known for great meals like corned beef and cabbage and that is one dish my family and I thoroughly enjoy eating. I've made it in the crockpot and on the stovetop. However you make it, it's always delicious! This year were are having something I've never made before and that's Bangers and Mash. SSS stay at Hotel Roanoke & Conference Center

Our annual sisters' weekend has come and gone. It really wasn't long enough but we all had to get back to work and our homes. We decided to go to Roanoke because one of us, Cathy, HAD to go to Black Dog Salvage. If you aren't familiar with them, they have a TV show on the DIY network. More to come on that visit, STAY TUNED. My job was to review the Roanoke Hotel and Conference Center . Upon entering the parking lot, all I could say was WOW!! What a majestic building. Just look at it! We were greeted by a gracious young lady at the front desk who checked us in and treated us to the delicious chocolate chip cookies DoubleTree is famous for. We also received a coffee mug featuring the Black Dog Salvage for signing up for the tour, of course, Cathy took the mug ;) Our room was nice with 2 double beds, flat-screen TV, a desk , a coffee bar, and FREE Wi-Fi. Our room had a view of the front entrance where we witnessed, one evening, a young couple receiving their send off

An Idea for a Party !!

I ( Cathy )  am going to make this for our Christmas party !!  Of course, I will adjust it to what I can get -- probably have to do something a little different but should turn out great !!    Looks yummy !!! Ingredients: 10 cocktail sticks 10 cubes of fresh (not tinned) pineapple  1 heaped tablespoon soft, dark brown sugar 1 tsp unsalted butter 70g pack Parma ham approx. 100g good Cheddar, cut into 10 cubes Method Toss the pineapple cubes in the sugar and set to one side. Melt the butter in a non-stick frying pan on a medium heat, and gently fry the pineapple pieces for about one minute, until the sugar has caramelised and the pineapple is golden. Thread the pineapple cubes onto a cocktail stick, followed by a twist of ham and then finish with a cube of the cheese.
