Mini Banana Cream Pie Recipe


Last week, I made the mistake of buying too many bananas at the grocery store. I thought I could make something delicious besides eating them, adding them to a smoothie, or making Mama Sassy's Banana Bread. Why not banana cream pie? I love the creamy texture and sweet flavor of banana cream pie. The smooth custard filling and graham cracker crust make it a perfect dessert for any occasion. Every bite is like a burst of tropical goodness with the ripe bananas and whipped cream topping. It's definitely one of my all-time favorite pies.

You can make an easy mini banana cream pie with the following ingredients:



This recipe will fill 6 of the mini graham cracker pie shells perfectly.

INGREDIENTS

INSTRUCTIONS

  1. Make pudding according to the directions on the box.

  2.  Slice up the bananas and add some of them to pie shells. Leave the rest for the top.

  3. Pour pie filling over the bananas. 

  4. Once the pies have set up in the refrigerator, and when ready to serve, spread the whipped cream over the pie filling, and top with a couple of banana slices.

To Store Cream Pies

It tastes best when served chilled, refrigerate at least 3 to 4 hours uncovered before serving without the whipped cream! The whipped cream will break down and just melt away. If storing longer than 4 hours, lightly cover with plastic wrap.

  • Refrigerator: You can keep it in the fridge for up to 3 days; if you keep it too long, the bananas may get a bit weepy, but it’ll still taste great!

Thanksgiving Menu 2023

Thanksgiving is a time to gather with friends and family to celebrate all that we are thankful for. There are many different kinds of foods that can be served at a typical Thanksgiving meal. A traditional Thanksgiving menu typically consists of a roasted turkey, stuffing, mashed potatoes, gravy, cranberry sauce, green beans, dinner rolls, and a variety of pies for dessert. In addition to this, many people like to serve a variety of side dishes including sweet potatoes, cornbread, yams, salads, macaroni and cheese, deviled eggs, and more. Turkey is usually the main event of the meal but other dishes like ham or roast beef are also popular. No matter what you decide to serve, your Thanksgiving menu will be sure to satisfy everyone around the table.

Celebrate National Strawberry Month with these Recipes


May is National Strawberry Month. Fresh strawberries are one of the most popular and refreshing treats anywhere and healthy too! Perfect for everything from cheesecake to mojitos to jam. And since the peak picking season starts in May, there will be plenty of juicy blooms. 

Here are some juicy tidbits about strawberries:

  1. Strawberries are high in Vitamin C. Eating eight strawberries is all it takes to consume 140% of a child's recommended daily intake of Vitamin C. Good thing my grandson loves strawberries.
  2. You can find them all over the U.S. Strawberries are grown in all fifty states.
  3. They are ar related to a popular flower. Strawberries belong to the Rosaceae flowering plant family, which is also the family of the rose.
  4. Strawberries aren't berries. Fruits that fall into the berry category have seeds on the inside, not the outside.
  5. They are very stimulating. The French are convinced that strawberries serve as a powerful aphrodisiac, so much so that it's a tradition in the French countryside to serve cold strawberry soup to newlyweds.
Make something wonderful with those strawberries. Here are some delicious recipes:


Strawberry Mojito

Ingredients
  • white sugar, for rimming
  • 2 large limes, quartered
  • ½ bunch of mint leaves
  • 7 strawberries, quartered
  • 1 cup white sugar
  • 2 cups club soda
  • 1 cup white rum
  • 8 cups ice cubes
Directions:
  1. Pour about 1/2 inch of sugar onto a small, shallow plate. Run a lime wedge around the rims of 8 cocktail glasses, then dip the rims into sugar to coat; set aside.
  2. Squeeze all of the lime wedges into a sturdy glass pitcher. Toss juiced limes into the pitcher along with mint, strawberries, and 1 cup sugar. Crush with a muddler to release strawberry juice and mint oil. Stir in club soda and rum until the sugar has dissolved.
  3. Pour into the prepared glasses over ice cubes to serve.


Strawberry Tart

TOTAL TIME: Prep: 30 min. + chillingYIELD: 8 servings.

Ingredients

  • 1 sheet refrigerated pie crust
  • 3 ounces German sweet chocolate, melted
  • 2 packages (8 ounces each) of cream cheese, softened
  • 3 tablespoons heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1-3/4 cups confectioners' sugar
  • 2-1/2 cups sliced fresh strawberries
  • 1/4 cup red currant jelly

Directions

  1. Preheat oven to 450°. Unroll the crust and press onto the bottom and up the side of an ungreased 9-in. fluted tart pan with a removable bottom. Place on a baking sheet. Bake until golden brown, 10-12 minutes. Cool on a wire rack.
  2. Spread melted chocolate over the bottom of the crust. Refrigerate until almost set, 5-10 minutes. Meanwhile, in a large bowl, beat cream cheese, cream, and vanilla until smooth. Gradually beat in confectioners' sugar. Spread over the chocolate layer.
  3. Arrange strawberries over filling; brush strawberries with jelly. Refrigerate for at least 2 hours. Remove the side of the pan before serving.

    TOTAL TIME: Prep: 25 min. Bake: 35 min. + cooling YIELD: 8 servings.

Ingredients

  • 1/2 cup plus 1 tablespoon sugar, divided
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 4 cups fresh strawberries (about 1-1/4 pounds), sliced
  • Pastry for double-crust pie
  • 2 tablespoons 2% milk

Directions

  1. Preheat oven to 425°. In a large bowl, mix 1/2 cup sugar, flour, and cinnamon; add strawberries and toss to coat.
  2. On a lightly floured surface, roll half of the dough into a 1/8-inch-thick circle; transfer to a 9-inch. pie plate. Trim crust even with rim. Add filling.
  3. Roll the remaining dough into a 1/8-inch.-thick circle. Place overfilling. Trim, seal, and flute edge. Cut slits in the top. Brush with milk; sprinkle with remaining sugar.
  4. Bake for 35-40 minutes or until the crust is golden brown and the filling is bubbly. Cover the edge loosely with foil during the last 20 minutes if needed to prevent over-browning.
  5. Remove foil. Cool on a wire rack 1 hour before serving.

  • Creamy Strawberry French Toast Bake

TOTAL TIME: Prep: 30 min. + Chilling Bake: 40 min.YIELD: 8 servings.

Ingredients

  • 3 cups sliced fresh strawberries, divided 
  • 2 tablespoons sugar
  • 1 package (8 ounces) of cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 1 tablespoon grated orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 1 loaf (1 pound) cinnamon bread, cut into 1-in. pieces
  • 5 large eggs
  • 1 cup half-and-half cream
  • Sweetened whipped cream

Directions

  1. Toss 2 cups of strawberries with sugar. In another bowl, beat the next 5 ingredients until smooth. Place half the bread in a greased 13x9-inch. baking dish. Spoon the cream cheese mixture over the bread. Layer with strawberry mixture and remaining bread. Whisk eggs and cream until blended; pour over top. Refrigerate, and cover overnight.
  2. Preheat oven to 350°. Remove the casserole from the refrigerator while the oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 40-45 minutes. Let stand 5 minutes before serving. Top with whipped cream and remaining 1 cup strawberries.

Cinnamon-Strawberry Sundaes

TOTAL TIME: Prep/Total Time: 10 min.   YIELD: 4 servings.

Ingredients

  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1/4 teaspoon ground cinnamon
  • 2 cups frozen unsweetened strawberries, thawed and drained, or sliced fresh strawberries
  • 2 cups vanilla ice cream
  • 1 teaspoon grated lime zest

Directions

  1. In a small saucepan, melt butter over medium heat. Stir in brown sugar, lime juice, and cinnamon. Cook and stir until sugar is dissolved. Add strawberries; cook until tender, about 2 minutes longer. Serve with ice cream; sprinkle with lime zest.
Ingredients
  • 1 sheet frozen puff pastry, thawed
  • 4 cups fresh strawberries, sliced
  • 1/4 cup plus 3 tablespoons sugar, divided
  • 1-1/2 cups heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • Directions

    1. Preheat oven to 400°. On a lightly floured surface, roll puff pastry to a 10-inch square; cut into 12 rectangles (approx. 3x2-1/2 in.). Place on ungreased baking sheets. Bake until golden brown, 12-15 minutes. Remove to wire racks; cool completely.
    2. In a large bowl, toss strawberries with 1/4 cup sugar. Let stand for 30 minutes, stirring occasionally. In another bowl, beat cream until it begins to thicken. Add vanilla and remaining sugar; beat until stiff peaks form.
    3. To serve, split pastries horizontally in half. Top each bottom half with 2 tablespoons of whipped cream and 1 tablespoon of strawberries; replace the top half. Top with remaining whipped cream and strawberries.


    TOTAL TIME: 4 hrs  Prep: 30 min. Additional time 3 hrs 30 mins  YIELD: 10 servings

    Ingredients

    • 1 (3-ounce) package of strawberry-flavored gelatin (such as Jell-O®)
    • cup boiling water
    • (8-ounce) package of cream cheese, softened
    • cup white sugar
    • teaspoon vanilla extract
    • (5-ounce) can of cold evaporated milk
    • (9-inch) prepared graham cracker crust

    Directions

    1. Dissolve strawberry gelatin in boiling water in a bowl; cool in the refrigerator until thick, but not set, about 20 minutes.
    2. Beat cream cheese, sugar, and vanilla extract together in a bowl until smooth.
    3. Beat evaporated milk in a separate bowl with an electric mixer until whipped and thick. Gradually pour the strawberry gelatin mixture into evaporated milk, beating constantly. Fold the cream cheese mixture into the gelatin-milk mixture to form cheesecake filling.
    4. Set graham cracker crust on a baking sheet or plate to maintain stability. Pour cheesecake filling into the crust. Refrigerate until cake is set, at least 3 1/2 hours.

    Super Bowl 2023 Drink and Food Recipes



    EAGLES OR CHIEFS?? Which team are you rooting for? Personally, I don't care who wins but I do care about the food we will be eating while watching the game on Super Bowl Sunday.

    What better way to cheer on your favorite team than with some delicious food you can make and share with your friends and family while celebrating the big day. 

    Let's get started with some drinks. To all you Philly fans out there, this drink is a must, a Philly Eagles Limebacker Drink recipe featuring Lime-A-Rita.

    Hosting an Eagles Homegating Party (soufflebombay.com)


    INGREDIENTS by the glass:

    • 1 can Lime-A-Rita
    • 2 TBS Lime Simply Syrup
    • 4 oz club soda
    • Ice
    • Green sanding sugar
    • Lime slice
    TO MAKE LIME SIMPLE SYRUP:
    • 1 Cup of water
    • 1 Cup of sugar
    • 1/4 Cup of freshly squeezed lime juice
    INSTRUCTIONS:   
    1. Rim the glass with simple syrup then dip in green sugar
    2. Fill the glass with ice, pour in one 8 oz can of Lime-A-Rita, add in lime simple syrup and give it a stir. Top it off with club soda and a lime slice.
    LIME SIMPLE SYRUP:
    1.  Combine all ingredients in a small pot, and heat just until the sugar is fully dissolved. Cool and store in a sealed jar in your refrigerator until ready to use.

    Now to the food. Here are some fantastic recipes for you to make and enjoy on Super Bowl Sunday or any day for that matter. My favorite part of this sandwich is the cherry pepper relish. OH SO GOOD!

    The Best Philly Style Italian Hoagies

    The Best Philly Style Italian Hoagies - Baker by Nature

    INGREDIENTS:
    • 1 tablespoon red wine vinegar
    • 1/2 tablespoon dried oregano
    • 2 tablespoons olive oil
    • 2 long Italian hoagie rolls
    • 1/4 lb prosciutto
    • 1/4 lb capicola
    • 1/4 lb genoa salami
    • 1/4 lb hot soprassata salami
    • 1/4 lb sharp provolone cheese, thinly sliced
    • 1 large tomato, thinly sliced
    • 1 small onion, thinly sliced
    • 1/4 cup iceberg or romaine lettuce, shredded
    • 1/4 cup hot cherry pepper hoagie spread

    INSTRUCTIONS:

      • Slice the rolls lengthwise, cutting only halfway through. Remove the thick, fluffy dough center of the bread and discard it. Set rolls aside.
      • In a small bowl whisk together the vinegar and oregano; slowly add in the oil, whisking as you pour to emulsify the mixture.
      • Drizzle a small amount of the oil/vinegar mixture on the rolls, then layer the cheese and meats.
      • Top with tomatoes, onions, lettuce, then peppers. Drizzle with additional oil/vinegar, cut in half, and serve!

      Oven Pork Ribs with BBQ Sauce

      Kansas City is known for its BBQ and here's a To-die-for Pork Ribs recipe with fall-apart meat slathered in a sticky homemade barbecue sauce! Can’t-stop-eating it, finger-lickin’ good!

      INGREDIENTS:

        BARBECUE RUB FOR RIBS:

        • 2.5 tsp paprika powder
        • 2 tsp garlic powder (sub with onion powder)
        • 1.5 tsp onion powder (sub with garlic powder)
        • 1 tsp cayenne pepper (omit for not spicy)
        • 1.5 tsp dried thyme
        • 1.5 tsp dried oregano
        • 1.5 tsp salt
        • 0.5 tsp black pepper

        RIBS

        • 2 – 2.5kg / 4 – 5lb pork ribs (2 racks)
        • 3/4 cup apple juice
        • 1 tbsp olive oil

        HOMEMADE BARBECUE SAUCE

        • 1/2 cup apple cider vinegar 
        • 1 1/2 cups tomato ketchup
        • 1/2 cup water 
        • 1 1/2 tbsp molasses
        • 1/3 cup brown sugar
        • 2 tsp mustard powder
        • 1 1/2 tsp garlic powder
        • 2 tsp Worcestershire sauce
        • 1 tsp salt
        • 1 tsp black pepper
        • 1 tsp Tabasco or cayenne pepper (optional, for spiciness)

        INSTRUCTIONS:

          1. Combine the Rub ingredients and rub onto both sides of the ribs (most on the meaty side). Set aside to marinate for 20 minutes (or overnight).
          2. Preheat oven to 160°C/320°F (all oven types).
          3. Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender.
          4. Remove from oven, and turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
          5. Line a new tray with foil then baking / parchment paper (you'll thank me later).
          6. Remove ribs from the oven, and transfer them to the lined tray. Pour any juices from the tray over the ribs.
          7. Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake for 10 minutes.
          8. Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, and bake for 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
          9. Cut ribs into individual or multiple rib portions and serve with remaining Barbecue Sauce!

            BARBECUE SAUCE

            • Place all ingredients in a saucepan and simmer over medium heat, stirring occasionally, for 45 minutes or until thickened.
            • Adjust to taste: sweetness with brown sugar / honey, salt and sour with vinegar. Use for glazing ribs and as a sauce for serving.

          1. In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Add the next 7 ingredients; cover and simmer for 1-1/2 hours.
          2. Add beans and heat through. On a platter, layer the corn chips, rice, meat mixture, cheese, onion, lettuce, tomatoes, and olives. If desired, serve with Picante sauce.

            • 4 green onions, sliced
            • 2 TBS sliced black olives

            INSTRUCTIONS:

            1. Mix beans and seasoning mix until blended; spread onto the bottom of the clear dish.
            2. Top with layers of remaining ingredients.
            3. Refrigerate for several hours or until chilled.

            • 1 pound of bacon
            • 1 pound of little smoke sausages
            • 1 cup of brown sugar

            INSTRUCTIONS:

            1. Preheat the oven to 350 degrees F (175 degrees C).
            2. Cut bacon slices into thirds and wrap each strip around a sausage. Secure the wrapped sausages on wooden skewers, several to a skewer. Arrange the skewers on a baking sheet and sprinkle them liberally with brown sugar.
            3. Bake in the preheated oven until the bacon is crisp and the brown sugar is melted about 20 minutes.

            • (15 ounces) can of chili without beans
            • (10-ounce) can of diced tomatoes with green chile peppers, drained

            1. In a medium, microwave-safe bowl, mix cream cheese, chili without beans, and diced tomatoes with green chile peppers.
            2. Microwave cream cheese mixture on high for 1 minute. Remove from microwave, stir, and repeat until the mixture is hot and thoroughly blended.

              • ¼ cup plain 2% reduced-fat Greek yogurt
              • 2 tablespoons spicy brown mustard
              • 1 tablespoon honey
              • ½ cup all-purpose flour 
              • 1 teaspoon paprika
              • 1 teaspoon black pepper
              • 1 teaspoon coarse or kosher salt, divided
              • 2 large eggs 1 cup whole-wheat panko (Japanese breadcrumbs)
              • 1 pound chicken breast tenders, halved lengthwise
              • 3 tablespoons olive oil, divided 

                INSTRUCTIONS:

                1. Place yogurt, mustard, and honey in a small bowl; stir to combine.
                2. Combine flour, paprika, pepper, and 1/2 teaspoon salt in a shallow dish. Break the eggs into another shallow dish; stir with a whisk until smooth. Place panko in a third shallow dish.
                3. Dredge each chicken strip in the flour mixture. Dip chicken strips in beaten egg, letting excess drip off. Roll in panko, pressing to adhere.
                4. Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Add half of the chicken strips; cook, turning occasionally, for 4 to 5 minutes or until crumbs are browned and the chicken is done. Remove from pan to a paper towel-lined plate. Repeat the cooking procedure with the remaining 1 tablespoon of oil and remaining chicken strips. Sprinkle chicken with remaining 1/2 teaspoon salt. Serve with the honey-mustard mixture for dipping.

                • 1 (2.1-oz.) package of fully cooked bacon slices 
                • 1 (16-oz.) container of sour cream
                • 2 cups (8 oz.) freshly shredded sharp Cheddar cheese
                • ⅓ cup sliced fresh chives
                • 2 teaspoons hot sauce
                • Garnishes: cooked, crumbled bacon; sliced fresh chives; freshly cracked pepper
                • Serve with: waffle fries

                      INSTRUCTIONS:

                      1. Microwave bacon according to package directions until crisp; drain on paper towels. Cool for 10 minutes; crumble. Stir together bacon and the next 4 ingredients. Cover and chill for 1 to 24 hours before serving. Garnish, if desired. Serve with crispy, warm waffle fries. Store leftovers in the refrigerator for up to 7 days.

                      Football Strawberry Mini Cheesecakes

                      INGREDIENTS:

                      • 2 cups dipping chocolates (milk is best for color)
                      • 24 large strawberries (keep leaves intact)
                      • cup melted white candy melts
                      • 24 chocolate sandwich cookies
                      • 2 packages (8 oz each) of cream cheese, softened
                      • 3/4 cup sugar
                      • 2 large eggs
                      • 1 tsp vanilla extract
                      • 24 football cupcake liners


                        INSTRUCTIONS:

                        1. First, heat the oven to 375°F. Line 24 regular-size muffin cups with paper liners and put one cookie into each cup.  
                        2. Next, use a large bowl to beat cream cheese, sugar, eggs, and vanilla extract.  Use a medium-high speed on the electric mixer for 1 to 2 minutes or until the mixture is airy and light. Spoon mixture into the muffin cups about 2/3 full. 
                        3. Lastly, bake for 20 to 25 minutes or until the toothpick inserted in the center comes out clean. (Using a water bath under the muffin tin would even be better).  Remove from muffin cups to a cooling rack as soon as possible. Cool for about 30 minutes or until they are at least room temp. Refrigerate for 1 hour or up to 24 hours before serving.  Top each cheesecake with a Football Strawberry! 
                        4. To make the football strawberries: (no more than 24 hours in advance) Melt chocolate in the microwave according to the package.  Dip each strawberry in the chocolate up to the top of each strawberry.  Set them on a piece of parchment paper and let them dry completely.  Once they are hardened, melt the white candy melts and place them in a piping bag and snip the tip off of the bag to make a very small hole for piping the candy out.  Make the laces on the footballs with this and let them dry completely.  Place each strawberry on top of the refrigerated cheesecakes!  Enjoy!

                        INGREDIENTS:

                        • 3 large eggs, room temperature, divided use
                        • 6 tablespoons reduced-fat butter, softened
                        • 1 cup sugar, divided
                        • 3 teaspoons vanilla extract
                        • 1/2 cup all-purpose flour
                        • 1/4 cup baking cocoa
                        • 1 package (8 ounces) of reduced-fat cream cheese


                          INSTRUCTIONS:

                          1. Preheat oven to 350°. Separate 2 eggs, putting each white in a separate bowl (discard yolks or save for another use). In a small bowl, beat butter and 3/4 cup sugar until crumbly. Beat in the remaining whole egg, 1 egg white, and vanilla until well combined. Combine flour and cocoa; gradually add to egg mixture until blended. Pour into a 9-inch. square baking pan coated with cooking spray.
                          2. In a small bowl, beat cream cheese and remaining 1/4 cup sugar until smooth. Beat in the second egg white. Drop by rounded tablespoonfuls over the batter; cut through the batter with a knife to swirl.
                          3. Bake until set and edges pull away from sides of the pan, 25-30 minutes. Cool on a wire rack.


                          Peanut Butter Football Dip

                            INGREDIENTS:

                            • 1/4 cup (57g) butter, softened 
                            • 4 ounces (113g) cream cheese, softened
                            • 1 cup (256g) peanut butter your choice; crunchy or smooth
                            • ½ teaspoon vanilla extract
                            • 1 ½ cups (170g) powdered sugar (up to 2 cups if needed)
                            • ½ cup mini chocolate chips
                            • Chocolate sprinkles or chocolate chips for the outside of the football
                            • White chocolate or frosting for the football laces

                              INSTRUCTIONS:

                              1. Cream butter, cream cheese, and peanut butter until mixed (using a hand-held mixer). Mix in vanilla.
                              2. Add powdered sugar, ½ cup at a time, and mix until combined. (If you want a stiffer mixture, add the extra ½ cup of powdered sugar.) Mix in chocolate chips.
                              3. Turn out the mixture on a large sheet of waxed paper. Use your hands to form a football shape. 
                              4. Place the waxed paper onto your serving plate. (It helps if the plate has sides…less mess!) Cover in sprinkles or chocolate chips, pressing them into the surface a little so they stick. Pipe on the laces using melted white chocolate or some leftover frosting and chill until ready to serve.
                              5. Serving suggestion: pretzels, animal crackers, cookies, and a spoon.
