Sweet Easter Nest Donuts Recipe


These Sweet Easter Nest Donuts are extremely cute and delicious. They take no time to make and are simply adorable. 

The original recipe comes from Country Crock and after looking at the recipe I decided I would try it with a cake mix. You need a donut pan or maker, obviously, to make these donuts. I purchased a set of silicone donut molds on Amazon. Once upon a time, I had an electric donut maker and I have no idea what I did with it, probably donated it to Goodwill.



The original recipe makes 6 servings but since I was using a cake mix, it made 2 dozen. You can also use a small box of cake mix if you don't want to make as many. In our household, donuts do not last long.

Let's get started making donuts!

Ingredients:
    Supermoist Vanilla Cake Mix or your favorite cake mix
    1 C of water
    1/2 C vegetable oil
    3 eggs

Chocolate Glaze:
    8 oz bittersweet chocolate chips
    2 T light corn syrup
    1 Stick of butter, hot and melted
    1/2 t kosher salt

Topping
    3 C sweetened shredded coconut

Instruction:
  1. Preheat the oven to 350°F. Brush or spray the donut pan with butter or non-stick spray.

  2. Make the cake mix according to box instructions.
  3. Spoon the batter into the prepared donut pan. Bake for 10-15 minutes, until the donut springs back when gently poked. Let cool in the pan for 5 minutes before overturning the donuts onto a wire rack to cool completely before glazing. 

  4. Toast the coconut on a cookie sheet tray after baking the donuts. 

  5. Once the donuts are cool, prepare the glaze. Combine the chocolate chips and corn syrup in a heat-proof bowl. Microwave it at 30-second intervals. Stirring until melted. Add the hot melted butter and salt, stir until completely smooth. Let sit for 5 -10 minutes to cool and thicken a bit. 


  6. Dip the donuts in the glaze then dip them in the coconut.
  7. Place your chocolate eggs in the middle. 

***NOTE - fill the donut pan cavities 3/4 full because you will get a well rounded donut. Also, if you let them set up, the glaze will harden.***

What brings you joy???

I've been thinking lately about what brings me joy. We all go through trials in our lives and I believe that during the struggle we can find a blessing and joy.

Here are a few things that bring me JOY:




  • My Lord as Savior is the foremost JOY in my life. If it wasn't for him giving me life and victory to fight the good fight, I don't know where I'd be today. Thank you, Lord!!





  • My husband Jay, is my greatest earthly joy. He makes me laugh at the dumbest things and he keeps me grounded. He's a wonderful father, grandfather, and provider and he's the love of my life. I'm glad he found me!

  • My children are a blessing and a joy, no matter how old they are, they will always be my babies.
  • My grandchildren are just the icing on the cake with a big old JOY on top. I love them to the moon and back. What's the saying, "If I had known grandchildren were this much fun I would have had them first".
  • My dog Baxter is a wonderful dog and brings great joy. You don't need therapy when you have a dog. They sit there and listen without judgment. Baxter is soft to the touch, fun to play with, and loves to be with me.
  • Birdwatching has become therapeutic and a great joy. I feed the birds in my front yard and as I sit on the front porch watching and listening to them I can only think about God's mighty creation and that He not only made them for Himself but for our enjoyment.
  • Chocolate is a great joy. I LOVE it!! It tastes so good and creamy. Oh to have a Snickers bar right about now.
  • The beach is a source of joy. Sitting on the beach or on the deck of the beach house has this calming effect.  I could go to sleep in the hammock under the beach chouse. There is a sense of peace and joy that comes over me when watching and listening to the ocean waves.

  • Gardening has become fun for me. The joy it brings me to see my flowers grow and the harvesting of my veggies is indescribable.

  • My husband bought me a water fountain for Mother’s Day a couple of years ago. It has a relaxing effect and sounds like a babbling brook in nature. Brings me JOY me every day. 


  • Trying a new restaurant: You never know what’s out there as far as different food unless you try a new restaurant and that always brings me joy. I love food 🥘 

  • Making a seafood boil: I have been making seafood boils for years now, especially on our beach trips. What brings me joy about this is my family loves it. Just the sounds and smiles on their faces bring me extreme joy.
