Making Mini Meatloaf is so Easy!

I made this and it is so easy! If you love meatloaf like I do and don't have a large family to feed, this is perfect !

Let's Go On A Penny Date

My husband and I make an effort to go on a date as much as we can. Since the COVID-19 pandemic happened, obviously, we aren’t able to go out to eat or to the movies. So we thought we'd try The Penny Date.  We were thinking about taking picnic food just in case we ended up in nowhere land, but we decided to wing it and whatever would happen we would be fine with it.

Here's how it works:
  1. Get yourself a penny.
  2. Make sure you have a GPS handy, just in case you get lost.
  3. Choose a number between 10 & 20.
  4. At every intersection flip the coin, if it's tails go left, if it's heads go right. You get the idea.
  5. When you reach the number of flips, you've reached your date destination.
  6. It helps to have a paper and pen to keep up with the number of flips.
You can also make it a bit more fun and ask questions of your significant other to learn more about each other. You'd want to answer the questions too. Also, you may want to have previously thought out the questions before heading out and write them down.

If you are little adventurous, this might help you break the monotony of staying at home.

Here’s how our date went. Jay picked the number 10 and it took an hour to get to our 10th flip but the ride around the countryside through three counties was worth it. Lots of chatting, answering questions and finding out new things about each other.  Yep, after almost 30 years, we actually didn't know some things about each other. The scenery was a bonus because it was a beautiful afternoon. Since we should have brought a picnic, on the last flip there was no restaurant for miles, we finally decided to stop at the first restaurant which was Burger King.



We ordered our food and pulled up in the parking lot looking towards the beautiful dogwood trees in the bank parking lot.

At least it was a nice evening to roll the windows down and enjoy a Whopper, fries & a Diet Coke.

You can find multiple ideas for date nights on Pinterest. I found this idea originally while watching the show Counting On. The Dating Divas have the instructions on their website. You can change it up they best way it suits you and the love of your life. I read somewhere on the internet that a family did this with their kiddos to get out of the house. Great idea!!

LEFTOVER HAM CASSEROLE RECIPE

We hope everyone had an awesome Easter. We have a great recipe to share with you, using that leftover ham. It's delicious & an easy recipe.

Leftover Ham Casserole Recipe

INGREDIENTS

  • 1 1/2 cups cooked macaroni
  • 2 cups broccoli
  • 1/2 cup onion, chopped
  • 1 (10 oz) can low-fat cream of mushroom soup
  • 2 cups cooked ham, chopped
  • 1 1/2 cups light cheddar cheese, shredded
  • pepper to taste
  • 1/2 - 1/4 cup water
DIRECTIONS
  • Oven at 400 F.
  • Set aside 1/2 cup shredded cheese.
  • Steam the broccoli until tender-crisp.
  • In a lightly sprayed casserole dish, combine noodles, broccoli, onion, cream of mushroom soup, ham, 1 cup of cheese and pepper.
  • Stir to combine.
  • Top with extra 1/2 cup of cheese.
  • Bake for 30 - 35 minutes, until hot and bubbly.
